  • Uni-Directional Flow: Your floor plan must demonstrate a “Raw to Cooked” flow. Raw ingredients must enter one way and finished dishes exit another, with no cross-traffic.
  • Separation of Processes: You cannot mix clean and dirty workflows. Physical segregation between raw meat preparation, vegetable preparation, and ready-to-eat areas is mandatory.

2. Structural Integrity: Floors, Walls, & Ceilings

  • Flooring: Must be light-colored, non-absorbent, fire-proof, and seamless.
